It’s My First Time Cooking Christmas Dinner! (What the heck should I make?)

Oh, and I’m low key obsessed with my new Kendra Scott earrings from the pic above. They’re sold out on her site, but here’s a similar pair.

One of the things I’m always super grateful for over Thanksgiving is that my MP, (Matt’s mom) is an excellent cook and she always hosts for our family holiday get-togethers. Since we’ve moved to Austin, she’s coming the day after Christmas and we’re travelling together to the-place-I-can’t-yet-disclose because it’s a surprise for the S Bunch.

Anyway, this leaves me with figuring out what to make for Christmas dinner cause we’re on our own for the first time since well, ever. I love to cook, but you may have seen my top complaints about it with my kids’ current ages. I’ll summarize it below in a run-on sentence best read super-fast in your head:

I’m a vegetarian, Matt’s a carnivore, our older two kids are pasta-tarians (plus Scarlet eats any and all fruit and veggies and we won’t even talk about Sterling) and Shepherd likes Gushers, chicken nuggets and chocolate milk. So I cook more entrees than a Jewish Deli. That makes for a lot of clean up. So. Whether or not I like to cook dinner depends on the day and how many breakfasts, snacks, lunches, second snacks and play-doh “food” creations I’ve already made and cleaned up on said day.

SO. All that being said, I’m not gonna even think about the clean up, I’m just going to forge ahead with this plan for my first time cooking Christmas Dinner:

  1. Honeybaked Ham. (Bagels and bacon, Christmas and Hanukkah — yep, we’re that kind of Jewish family hehe). You can order it online and have it show up at your door from The Honey Baked Ham Company, but we have our very own Texas version right down the street so I picked one up and it was easy. I wouldn’t personally know, but Matt and Pam say it’s the best, and all I have to do is warm it up. GREAT.

  2. Steamed Artichokes. Scarlet is obsessed with steamed artichokes and they’re sort of fancy holiday fare, I’d say! Send me a message if you’d like the recipe.

  3. Mashed potatoes. I’ll add cheese and scallions to mine for a little extra flavor and protein.

  4. Salad. Matt, Scarlet and I love butter leaf lettuce, so I picked up some of that and I’m going to add pears, goat cheese and make a little balsamic vinaigrette dressing. (Equal parts evoo and balsamic vinegar, a tablespoon plus of honey, and salt and pepper to taste).

  5. Butter pasta. What. Ever. Just eat please, kids. (with a side of Parmesan)

  6. Wacky cake. This is my Nana’s recipe, or maybe my great grandmother’s recipe. I’m not sure. But it’s the MOST delicious cake and homemade icing combo.
